• Chicken Lo Mein

    May 7, 2014

    lomein_001

Every couple of months Dusty and I go out for Chinese food or do take-out. Dusty’s go-to is something that has chicken, a dark sauce and no vegetables. I really like chicken lo mein. I scoured the internet looking for the perfect recipe and ended up just combining a whole bunch of them together to create the perfect chicken lo mein that anyone can make at home.

    lomein_002

    Chicken Lo Mein
    Serves 3-4

    Ingredients
4 oz lo mein noodles or chinese noodles
    1 tablespoon oyster sauce
    2 tablespoons soy sauce
    1/4 chicken broth
    red pepper flakes
    2 garlic gloves, minced
    1 tablespoon canola oil, divided
2 large chicken breasts, cut into small pieces
    salt & pepper
    1-2 large carrot, thinly sliced
1-2 large celery stalk, thinly sliced
    4-6 oz mushrooms, sliced
    1-2 cups broccoli florets
    2 green onions, chopped

    Directions
Cook noodles according to directions on package. We’ve tried a variety of noodles but I really like lo main noodles or chinese goods better than spagetti noodles. Drain and set aside. Combine oyster sauce, soy sauce, chicken broth, and red chili pepper flakes in a small bowl then set aside. Season chicken with salt & pepper then set aside. Heat large skillet over medium high heat. Add 1 teaspoon oil then add chicken and cook until no longer pink in the center. Remove to a plate and set aside.

Heat another teaspoon of oil in the skillet then add carrots and celery. Cook until slightly tender. Add remaining teaspoon of oil then add garlic, mushrooms, broccoli, and green onion. I like a lot of vegetables so I tend to add more so that’s why I’ve given a range for amounts of vegetables that you can include. If you’d rather it be meaty, add less vegetables and more chicken. Cook until vegetables are tender, about 3 minutes. Add cooked chicken and noodles back into the wok. Pour in sauce, then mix together well, and serve.

Weekly Baby Picture / Week 35

Annabelle is 8 months old! And our little lady is so mobile! It’s almost as though I blink my eyes and she’s started crawling faster, standing more, and walking along side everything so much more confidently.  Annabelle’s teachers keep telling me that she’s a daredevil and likes to hang out with the “big kids” (you know, the 1-year olds).  I’m starting to realize what they mean; she just has all kind of energy and never wants to stop moving.

Weekly Baby Picture / Week 35

This weekend I helped host a BBQ and diaper party for some friends of mine who are having their third child this summer and it’s been the first time we’ve all got together since my friends and I have had babies (and since our little ones are old enough to realize that there are other babies around). It was so much fun to see Annabelle play with some of the kids I hope she grows up around and becomes friends with.  I see lots of play dates coming in the near future.

Weekly Baby Picture / Week 35

Although Annabelle is very mobile now, it’s still so much easier to take her places because she’s able to sit on her own and doesn’t need her carrier. Restaurants specifically have become a whole lot easier.  Meeting friends up for dinner or drinks with Annabelle is actually fun.  We’re training Annabelle early to be an awesome restaurant patron.  So this week Annabelle and I met a girlfriend of mine for a little sushi.  Annabelle was great, eating her dinner and smiling at everyone.

Weekly Baby Picture / Week 35

Annabelle helped  cheer my sister Jodi on this weekend.  Here’s a picture of the two of them right before Jodi ran her 5K race.  Annabelle loves supporting her family!

    raceday

Here are a few party pictures of Annabelle and two of her friends, Rowan and Emma.  Rowan wasn’t too happy with Annabelle’s overwhelming personality.  She was all about getting in his personal space and he wasn’t.  I wish I could have gotten a better picture of Emma and Annabelle but there were just too many more exciting things going on than smiling for a picture.

  • In my last Paris post I gave my top 6 favorite things to do in Paris but I didn’t get a chance to talk about the best places to eat.  I’m no food expert but we do enjoy trying new restaurants, here are our top favorite places to eat in Paris.

    laregalade_011

La Regalade Saint Honore. For a bit of a nicer night out, not too fancy but fantastic. Classic Paris bistro and a great example of a perfect Paris bistro experience. La Regalade has the best rice pudding you’ll ever have in your life. Never had rice pudding? Think you you won’t like it? Try it! Seriously. You do need reservations for this one but we haven’t had a problem getting them if we call a few days or week in advance. There are two locations so make sure you’re calling the right one when making reservations or getting directions. Located in the 1st. The one we’ve gone to is the one located on Saint Honore.

    frenchiewinebar_007

Frenchie Wine Bar. It’s a no reservation, first-come first-serve wine bar across the street from Frenchie restaurant.  Opens at 7pm, go a little early to get a spot. Small plates, fresh ingredients, wonderful wine selection.  We went last summer towards the end of our stay and everything was so wonderful (including atmosphere, food and wine) that I had wished we had tried it earlier in our visit so we could have gone back.

    lescocottes

Les Cocottes. Great fairly casual but nice dinner place in the 7th. No reservations allowed, so you’ll wait in line for a seat. It’s pretty great though. Everything is served in little pots.

L’as du Falafel. If you like falafel, perhaps the best in the world. Great place for a cheap lunch in the Marais. Located in the 4th. This street is known for having a lot of falafel places but L’as du Falafel is the standout.

    breizh_006

Briezh Cafe. Best crepes ever. Make reservations, even for lunch as it’s a tiny place. Totally worth it though. Make sure to get the caramel au beurre salé (salted butter) crepe. It’s life changing. We got lucky one time and went at a random time between lunch and dinner and were able to get a spot in the gift shop (they serve food there too).

Berthillon. Fantastic ice cream place on Ile Saint-Louis. Draws a big crowd. Located in the 4th. Make sure not to stop at the 10 other shops that sell Berthillon ice cream on your way, go to the original location!

    chezl'amijean_001

Chez L’ami Jean. Super cramped and old, but amazing amazing food. Check out my post to see more of the great food. They have some great rice pudding. Located in the 7th.

    cantinecalifornia_002

Paris Food Truck, Street Food, or Creperie. It’s not always about fancy French food. And these places are everywhere. Make sure you eat plenty of banana and nutella crepes, kabobs, burgers, etc. If I were to recommend a great lunch place, Cantine California is delicious. They drive to two locations each week. If you’re craving a really good burger and fries or an awesome taco go here.

There’s also a ton of restaurants that are more difficult (maybe impossible) to get into, but if you can, they’re totally worth it. Fine dining at reasonable prices. A couple really good examples are Septime, Frenchie, and La Chateaubriand. However, if you want the real Paris Bistro experience I can’t recommend La Régalade enough , which I mentioned above.

  • Top 6 Things To Do In Paris

I’ve started counting down the days until we leave for Paris and I can’t stop thinking about how much fun it’s going to be (and how many things we need to accomplish before we can walk on that airplane)!

We’ve had a handful of friends who have asked us if we have recommendations for them while they’re in Paris. And of course we do! I’ve been wanting to share some of our favorite places and things to do and thought now was the perfect time as the countdown continues. To start, here are a few sightseeing recommendations for anyone visiting Paris. Of course, these are just a few of our favorites, you can see other things we’ve done in Paris by reading some of the other Paris blog posts I’ve written about this wonderful city.

Top 6 Things To Do In Paris

Walking Tour of Paris. There are tons of self-guided and organized tours of Paris. You choose which you’d prefer but Paris is a very walkable city and you should take full advantage! And what’s great about a walking tour of the city is that by the end you’ve seen a lot of the awesome sights all in just one morning or afternoon.  If you don’t have it already, get Rick Steves’ Guide to Paris. Or if you’re traveling around the country get Rick Steves’ Guide to France. It’s fantastic and will save you tons of time in lines, give you great advice on accommodations, etc. Best guidebook ever. And since you have Rick Steves’ book, take one of his walking tours. He has great guides in his book or even better, he has an app that you can download on your phone or iPod and listen to while you’re walking. The app even comes with a map that you can follow. He has audio tours for the Louvre, the Orsay, Versailles Palace, and Historic Paris Walk.

Top 6 Things To Do In Paris

Go to the Eiffel Tower (in the day and at night). If you can only go once, go at night! In fact, go sometime a little before 9 or 10pm, take a bottle of wine (and opener) and a blanket. It’s awesome. Every evening the Eiffel Tower sparkles for 5 minutes every hour on the hour. It’s one of our favorite things in the whole world. If you have time, climb the tower but it’s really not necessary. There are tons of places that you can get a great view of the city.

Top 6 Things To Do In Paris

Go to a museum. The Louvre is awesome. The D’Orsay is awesome. Rodin is awesome. Pompideau (modern art) is great if you want to look at the building from the outside (not the one I’d choose to pay to go to unless you’re really into modern art).

Top 6 Things To Do In Paris

Go to a market. There are a bunch of great outdoor food markets that are a lot of fun. The one near the Bastille is the largest, and runs Thursday and Sunday mornings from 9 to noonish. It’s fun just to walk up and down the isles looking at all of the beautiful food, flowers and random selection of household items.

Top 6 Things To Do In Paris

Go to a park or garden. I highly recommend the Tuileries Garden or the Luxembourg Garden. These are huge gardens/parks. Take some lunch and do a little people watching! If you’re looking for something a bit smaller, try Place des Vosges, located in the Marais district.

Top 6 Things To Do In Paris

Go on a tour. These past two summers I’ve gone on a Cheese Tasting Tour and then a Taste of Saint-Germain Food Tour. I’ve had really good experience with Paris By Mouth but there are many other companies that offer great options. This summer I’m hoping to try going on some type of tour using Vayable.com. They offer tons of unique tours and experiences for anyone visiting a variety of cities, including Paris. Some of the ones I want to do are Paris Design Tour, Learn to Eat Like a Local, Wine Tasting, and Paris Flea Market Tour.

I’ve told you six of our top Paris recommendations and really, our favorite things to do but I haven’t mentioned anything about food. If you’re looking for places to eat, check out my next post, I’ll be listing a few places that we think are worth your time.

Weekly Baby Picture / Week 34

And again, one week later and I’ve seen a fourth tooth getting ready to poke out (I hope this doesn’t continue—at this pace we’ll have a whole set of teeth within the month). We now how two vampire teeth up top and two front and center on the bottom.

And another first to add to our book of Annabelle treasures, she got her first incident report from school. And this also happened to be Annabelle’s first major accident as well. The culprit, a toy horse. Have I mentioned how movable Annabelle is and that’s she’s not only standing up but walking along furniture, walls, people, and anything she can get her hands on. Well, this time around she stood up next to a toy horse with wheels, the horse moved and she toppled over, hitting her face on the horse. It all happened on one of the busiest days for both Dusty and I (isn’t that how it always happens).  I was helping host a conference for more than 50 undergraduate students from around Nebraska and Dusty was heading to South Dakota.

Weekly Baby Picture / Week 34

I had just introduced our morning keynote speaker and heading to the back of the room when I noticed that I had just gotten a call from daycare. I called back and they said she had fallen and gotten a cut right below her eye. It had stopped bleeding but they suggested we stop by to take a look at it and make sure we didn’t think it needed any extra attention. Dusty stopped as he was heading out of town and said it looked just fine. By the time I picked her up at the end of the day she was as happy as a lark and you wouldn’t have known anything had happened, if it weren’t for the bruise and cut under her eye. And as you can see from her weekly pictures taken five days later, you can’t even see a thing.  It’s crazy how fast kids heal. Here’s a picture of that darn toy horse. I wanted to get a picture of Annabelle’s bruised face for posterity sake but by the next day you could barely tell there was anything worth talking about.

Our newest treat for Annabelle this week was an avocado.  Loved it!

Weekly Baby Picture / Week 34

And of course everyone’s always asking, how’s Annabelle sleeping?  My answer, she’s sleeping! Not through the night but she’s in a good routine.  She wakes up 1-3 times each night/early morning.  Sometimes she wakes up more but most of the time it just takes a minute of snuggling from mom or dad and she falls back to sleep.

Annabelle had spring break at school and got Friday off so I took her to work with me. Here she is helping me restock the paper.

Weekly Baby Picture / Week 34

We also celebrated Easter. So much fun! My family throws a huge Easter egg hunt every year and this year we had absolutely beautiful weather!  Her eggs were filled with baby snack foods and cookies.  She loved them! And then Sunday we went to Dusty’s family to celebrate the holiday! Two days filled with family, delicious food, and lots of smiles!

Weekly Baby Picture / Week 33

One week later and we’ve found a second tooth!  This time it’s on the top a bit to the right side.  And as we were trying to feel around in that little mouth of hers it feels as though there’s another one ready to pop out on the upper left side.

Our little cookie monster!  We’ve started to feed Annabelle more.  Instead of just two/three ounces of food at lunch and the same for dinner she’s getting three/four ounces at lunch, another two for her afternoon snack and then at least two ounces for dinner.  We tried pureed broccoli this week. Surprise! She liked it.  I don’t think there’s anything she doesn’t like.  We’ve even started feeding her little bits of banana.

Weekly Baby Picture / Week 33

Annabelle had picture day at school this week.  When I first saw the announcement on the quarterly newsletter we get I was a little intrigued.  First, picture day at daycare? Second, how in the heck are they going to take a “school” picture of a 7-month old?  To answer the first question, yes, picture day at daycare.  And to answer the second, in the infant room they only take a group picture of all the kiddos (not sure how it goes with the older kids) so no individual “school” pictures yet.

Of course, I wanted Annabelle to look super cute for her first classroom picture so I gave her a bath in the morning, brushed her hair and proceeded to put on a super cute outfit.  She promptly spit up all over her super cut outfit so we put on her second cutest outfit.

Weekly Baby Picture / Week 33

I left for a work trip to Phoenix at the end of the week and I think it might have been even sadder to leave her for just this one night than it was to leave her when she was 3-months old and I left her for 5 days.  I survived and when I returned she was saying dada.  It was something closer to dadadadada-gagaga-nanana with dada in the middle but she’s got the “d” sound down.  No mama or “m” sound yet but I’m sure it’ll come soon enough.  Now just trying to help her understand that when she says dada that she’s referring to the guy that hangs around the house all the time is another story.

Weekly Baby Picture / Week 32

The biggest news of the week is that we’ve found our first tooth!!  It’s reasons like this that I love writing weekly updates.  On Sunday (March 30) Dusty was playing with Annabelle and made the discovery.  It’s one of the bottom middle ones.  This means teething has begun.  I promptly got out the baby Tylenol and teething gel to help relieve some of this pain that has to be coming but we haven’t noticed any real changes in her demeanor and she doesn’t seem to bothered by this foreign object in her mouth.  I had assumed the negative effects of getting teeth started right at away but nothing yet.  All I hope is that it’s not too rough on her when it all starts. Read more information about Delaney Park Dental for oral health and hygiene.

Weekly Baby Picture / Week 32

This week Annabelle had a couple of play dates with her cousins.  It’s so much fun to watch them all together.  Emma and Mia take turns carrying her around the living room and making her laugh.  They have this game they play where one of them gets to try to make Annabelle laugh and once she does the other gets a turn.  They go back and forth like this while I’m watching from the kitchen, trying to get some dishes done.  I’m so amazed that even though Annabelle and her cousins are more than 7 years apart that they have so much fun together.

Weekly Baby Picture / Week 32

Now that she’s getting a bit older and has started getting teeth I wanted to introduce some new foods.  Annabelle ate pureed plums and zucchini this week.  As always, she did fine with both.  I think the zucchini is a little less flavorful for her and isn’t as exciting as some off the other foods.  We’ve been mixing the zucchini with other foods to make it a bit more tasty.

Weekly Baby Picture / Week 32

Evenings at home are a lot of fun.  She’s old enough now that she can play on the kitchen floor when we make dinner.  While Dusty’s cooking I’ll prepare some dinner for Annabelle and feed her.  And then I’ll give her a few baby buff snacks that she can gnaw on for a bit.  She’ll play for a bit longer and then right before or right after dinner I nurse her before going to bed.

Putting Annabelle to bed is usually a family affair.  Now that I think about it, it’s not only bedtime but anytime she needs a new diaper or a new outfit.  She’s such a wiggler and wants to be on all fours or sitting that laying down for a diaper change or to get pajamas on involves Dusty entertaining her while I carefully maneuver around and change her.  In the mornings I’ll hold her, facing Dusty and while he talks to her I’ll put her onsie on and then Dusty quickly puts pants on her.  If there’s only one of us she’s already crawled across the room with a shirt around her head, naked from the neck down.

Here’s another quilt I’ve been working on these past couple of months.  I took the scraps I had from all of the quilts I’ve done and started sewing!  I love looking at all of the different fabrics and remembering the original quits they were used for.  I used fabric from Ikea for the back and binding.
